Potato & chorizo frittata made microwave-easy

With dining in restaurants being closed to dining during isolation, it’s fair to say we’ve all been forced to cook more. And while it’s probably a blessing in disguise, it can be hard to knock up new recipes, especially when time is of the essence.

Thankfully, Sharp Australia has shared some simple recipes that you can whip up in your microwave.

Yes, you heard that right. From a savoury hot meal to a decadent sweet treat, you can now show off your cooking prowess and impress your loved ones, simply by cooking with your microwave.

Serves 4

Ingredients

400g desire potatoes cut into 2cm pieces
7 eggs, at room temperature
1/3 cup fresh chopped spinach
Salt and pepper to taste
2 shallots, thinly sliced
1 ½ chorizo sausage, sliced
½ red capsicum

Step by step

In a medium microwave safe glass bowl, add potatoes. Cover and cook for 4-6 minutes on HIGH (100%), until just tender. Drain and set aside.

Grease the inside of a shallow microwave safe dish (approximately 6cm high). Add the potatoes, covering the base in a single layer.

In a small bowl, beat the eggs and spinach with a fork until well combined. Season with salt and pepper.

Place the shallots, sausages and capsicum evenly over the potato. Add the egg mixture. Cook for 12-14 minutes on MEDIUM (50%), until egg is set and firm.

Serve immediately with a fresh salad.
